You know those days where you just need a rich, chocolatey dessert? Everyday you say? Ditto. Well here you have it, my beautifully creamy rice pudding! I'm not a huge fan of plain rice pudding but put some chocolate in it and you can't hold me back. I will. eat. the. whole. thing.
Cocoa is apparently a high FODMAP food. Naturally, I cried when I read this. But I've found that in moderation (a maximum of a tablespoon a day) there is no complaint from down below. So my daily chocolate serving has only been reduced not discarded. YAY!
Right, onto the pudding. This could not be simpler! Put ingredients into a oven proof dish and bake for 2 - 2 1/2 hours and stir it occasionally. Now you have no excuse not to make this right now. What are you waiting for?
Rich Chocolate Rice Pudding
500ml full fat milk (lactose free if required)
4 tbsp Arborio rice
2 heaped tablespoons cocoa powder
1 tsp instant coffee (more if you want a mocha pudding)
100ml boiling water
- Preheat oven to 130 C. Rinse the rice and place in pie dish with milk and sugar.
- Combine cocoa powder, coffee and boiled water and stir until cocoa and coffee have dissolved.
- Pour into pie dish and stir until all ingredients are combined.
- Bake in oven for between 2 and 2 1/2 hours, stirring occasionally to prevent a skin forming. Serve hot.
